The best new recipes I find come up when you are searching the fridge, freezer and cupboards and coming up with nothing much. Then inspiration strikes you and your off!!!
It was the day before do a ‘proper shop’ and I was struggling with what to make for supper. No gluten-free pasta, a sad amount of rice enough for a toddler and a good few potatoes that were destined for nothing more than mash. Having two naan breads in the cupboard Bex and Oz had there naan bread pizza’s and salad.
I got peeling the spuds, chopping onion and I knew I had a ball of mozzarella in the fridge. I was aiming for cheese, onion and potato pie affair. Then glancing over I saw the left over homemade pizza topping and inspiration, my pizza pie.
As such I don’t have weights of potatoes as I really wasn’t planning to make anything amazing or blogable!!!
So roughly to make this extremely yummy ‘Potato Pizza Pie’ you need:
One quantity of mashed potato. (Think the sort of amount you would use for mash to go with your sausages!) Again this is perfect if your making for just two just use the amount of mash you would use for you both, again same with just one or more of course.
Pizza topping as in my recipe here (this is enough for a large pizza to serve four adjust quantities for amount your making for.)
1-2 onions (I used red onions hence the darker look in the picture!)
3 slices of bacon chopped (veggie add instead mushrooms or peppers etc)
1 ball of mozzarella
A little bit of grated cheddar (optional)
A sprinkling of dried oregano or mixed herbs
Black pepper to season
Totally and so simply:
- Preheat oven to 190ºC
- Put your mash potato into an oven proof dish and spread out evenly. This is your base.
- Smooth over the pizza topping paste.
- Add your onions, bacon or what ever topping you have chosen.
- Finish with mozzarella and cheddar if using. Sprinkle with some dry oregano or mixed herbs and a good grind of pepper.
- Bake for 15-20 minutes or until the cheese is bubbly and turning brown.
- Serve, this sliced and held it shape perfectly. Just cut and remove with fish slice.
Really good enjoyed with salad.
The toppings can be changes just like pizza toppings. This will be made time and time again here and the next time I do mash I will double it up and cook in a big pan so the following day the mash is already to be pizza’ed!!!
