Meal Planning Monday

Well the week whizzed past last week and I can’t believe we are here on Monday again. I stuck to the meal plan except yesterday we swapped roast for homemade asparagus and tomato Quiche. Gluten free and very tasty, I actually baked it blind first which I never usually do as it seems a bit of a faff but it really made a difference.
As it is half term and the run up to Bex’s birthday I can’t promise to stick to the plan but here is what it should look like!!!
Monday – Lemony new potato salad, hard-boiled eggs and salad etc
Tuesday – Turkey, chilli and lemon meatballs served in tortilla wrap (not me) with salad and guacamole. Rice salad.
Wednesday – Vegetarian Bolognese (this may turn into an easy meal as Bex and I are in Plymouth for the day)
Thursday – Smoked paprika turkey steaks, spicy potato wedges and salad
Friday – Traditional Italian food. This could be anything as it is Bex’s DT project
Saturday – Homemade Pizza and birthday type food as Bex has a friend staying over
Sunday – Chilli, lasagna, pea’s and bread
So that what it should look like, shopping wise I need to get salad, lasagna and more cheese. I think we are going to be sent a delivery of Rachel’s yoghurt next week so will be using them in baking, puddings etc. Love using yoghurt in baking makes cakes wonderfully light!!!

They are good and adding lemon zest makes them extra nice. I seem to go rather lemon mad this time of year!!!

I made a vegan bolognese for the first time last week using soy mince and lots of veg. Your recipe with apple in it sounds interesting!

because I can’t eat gluten lentils make a great veggie swap. I quite often add apple to tomato based sauces which makes them rather yummy!!!
