Meal Planning Monday

This week there is one less of us *sob* so I have chosen a couple of things that are not on Oscar favourite hit list but Bex loves. Friday is Oscar’s choice as he will be home ‘hurray’ and I am sure very tired too!!!
Meal planning is going well. Am I more organised by doing it, yep I think so!!!
Monday: Stuffed jacket potatoes and salad. Will use up different veg and cheese for potatoes and maybe sausage too!!!
Tuesday: Easy meal tonight as out till later so it’s Ham, egg, chips and salad!!! But the best fried eggs in the world by my husband
Wednesday: Lovely big chicken stir fry, spicing it up with chilli, garlic and lemon (zest and juice) served with rice.
Thursday: Spinach, cheese and cherry tomato pasta.
Friday: Oscar’s choice, selection of cheeses, crackers (bread too) salad, dips and tortilla chip,salsa, spring onion and cheese grill thing!!!
Saturday: Lazy meal of pizza and salad. I will still be catching up with Oz!!!
Sunday: Roast ( Yet to decide what type)

So that is what we will be eating. I shall do a bit of baking and make some more of these gorgeous strawberry cakes, that I made last week to use up some strawberries I had left over.

Yep it is nice and easy especially as my husband does it!!! It is a meal we always crave after a few days of Christmas over eating
Love the look of your meal plan. We’re having Cauli Cheese stuffed potatoes tonight! My girls would call Oscars choice a bits and bobs night!

It a great meal choice and even better always leftover’s for lunch the next day!!! Cauli cheese stuffed potatoes sound good! I ended up putting aubergine, onion and tomatoes and roasting them at the same time as baking the spuds. It was very nice
