Last week meal plans went well. The roasted veg with Camembert was gorgeous and I highly recommend. I will blog the recipe later on. On Saturday night curry I made a really yummy side dish with left over new potatoes from Friday and some spinach and mushrooms I had left over in the fridge. We added poppadoms, tomato and onion salad and chutney’s so it really felt like a proper Indian meal!!! I had to swap lamb, veg tray bake for an all in one chicken roast on Sunday as I am trying out a Mermaid roasting tin that has been sent to me.
Other than that I really am liking planning my meals and I am sure it will save me money too. As well as the bonus of not having that stressful ‘What we having for dinner tonight thing!!!’ All meals are planned so the whole family eat them so sometimes I feel my weekly menu is maybe a bit restricted but beats making lots of different meals 🙂
So here is what we will be eating this week. Sunday I am leaving free as Oscar will choose this, as he is going on his first ever residential away for four nights*sob*.
Monday: Left over chicken and vegetable pie with broccoli
Tuesday: Quorn spaghetti bolognese ( I will have gluten-free pasta and a tomato and herb sauce)
Wednesday: Spicy sausage casserole and jacket potato
Thursday: Quiche ( I will make it gluten free using this recipe and swap nettles for spinach) new potatoes and salad
Friday: Vegetable chilli and rice
Saturday: Lamb and vegetable tray bake and minted pea’s.
Sunday: Oscar’s choice!!!
