Meal Planning Monday

Back after a couple of weeks of non-planning. Still not having t new fridge/freezer means we are still shopping more often. This means A. I am bored of shopping and B. I tend to plan meals around offers I see in store (the variety we have the pleasure of visiting!).
Being a bit of a squirrel by nature (I love a full fridge, freezer and store cupboards) the whole not having a bigger fridge/freezer is a bit stressful as you can imagine
But with the car going wrong etc etc it has to wait!!!
So here is a five-day plan as I will be shopping again and never know what bargain will inspire me to cook something yummy!!!
Our meal plan looks like this:
Monday: Left over roast chicken and courgette pasta. Inspired by Utterly Scrummy Food for Families to use the left over chicken in pasta.
Tuesday: Root vegetable and bean soup with grated cheese and warm bread.
Wednesday: Roasted vegetable oven baked frittata, spicy potatoes wedgies and salad.
Thursday: Chilli and rice
Friday: Quiche, new potatoes and veg.
In the cake tin there will be Lemon flapjacks using my vanilla best ever flapjack recipe and swapping the vanilla for zest of 1 lemon and 2-3 teaspoons of lemon essence. This week I also want to try my ‘Blackberry and Apple muffin cake’ recipe and make it maybe with blueberries and also going to try it as a traybake instead too
Typing this up on Sunday (sometimes I can be organised honest!!!) so tonight I am looking forward to a lovely roast and as a treat apple and pear crumble with custard for pudding, yum yum!!!

I’m using leftover roast chicken this week as well, after a beautiful roast dinner last night – didn’t get round to making a crumble though and am now rather jealous

Sometimes there is nothing like a roast, though I am getting complaints from my husband about using the left over chicken as he strictly likes the breast meat only. But otherwise it is such a waste, sorry dogs!!! The crumble was scrummy though I rarely get around to making them but oh so good when you do. x
Ali. Can I come and live at yours, please. Sounds yummy. I am useless at meal planning, even when I try something happens to throw a spanner in the works.
Making the bed up for you now Jackie x I have to waver sometimes and have a change around but do try and stick to it. The only thing is I must remember to write it down as I forever have to pop back here to see what I am cooking
