Meal Planning Monday

Meal planning

I have not felt like meal planning as such the last few weeks but we have had some nice meals and trying hard to stick to a budget. This weeks plan is based on favourites I know will get eaten up, mostly easy to do. Except the Quiche, which once made always grateful I did make it but sometimes trying to make gluten-free pastry behave itself can be a challenge that has been known to make me cry!!! Popped to our local farm shop yesterday and got some lovely young leeks and gorgeous looking  Russian (but grown here!) Kale so tonight will use some of the leeks and Kale.

So my menu this week, though I may well chop and change the days around looks like this:

Monday: Chicken and leek casserole with a crusty muffin top. Serve with a big pile of kale which I may well stir fry with garlic.

Tuesday: Homemade pizza and salad

Wednesday: Beef Fajita’s, salad and lemon and herb rice salad.

Thursday: Homemade tomato soup and cheese and ham baguette melts.

Friday: Courgette, lemon and cream cheese pasta and salad. Swapping the broccoli for courgettes in this recipe here and adding lemon zest.

Saturday: Quiche, baked tomatoes, new potatoes and pea’s.

Sunday: Yet to decide but most likely a roast of some sorts.

Yesterday I baked some rather gorgeous lemon curd muffins which are going a bit too quickly so I may well make more of these. I need to get golden syrup so I can make flapjacks so that muffins and flapjacks are what you will find in my cake tins this week.

      Thanks :-) the muffin top is great as to the kids it is no longer a boring casserole!!!

  2. There’s a lot of broccoli and pasta about this week ! Gluten free pastry and bread are so hard to do. Every credit to you, I make the non glutenites do without in our house !

      Yes the pastry when making a big quiche is really hard!!! If I manage it after 3 attempts of it breaking it is a major achievement :-) I feel I need to send gluten-free goodies to the non glutenites in your house ;-)

    All sounds delicious. I agree about quiche taking come fiddling to make. Each bit is simple enough, but it is not something you can set going and forget about.

      Thank you :-) Quiche is just an omelette in pastry after all but seems so much more work than that!!!

  4. The muffin top sounds interesting? What exactly is it??
