Really easy veggie bean burgers

I did used to be vegetarian and I still really enjoy veggie food, and like to have at least 3 veggie meals a week. Veggie meals served up here can be hit and miss with the rest of the gang, in particular Oscar. Despite him rarely eating meat when he was little and being the biggest salad loving child I know, veggie food has to be extra tempting to get a thumbs up. As most Mum’s know getting a thumbs up it always a good thing, or is that just me? As a bonus they are really healthy too.

So here and Oscar approved (practically Michelin stars of veggie food) is my recipe for….

Veggie Bean Burgers

To make the veggie burgers you will need:

1 onion finely chopped

1 red onion finely chopped

1 courgette grated

3-4 carrots grated

1 garlic clove crushed

2 slices of bread made into breadcrumbs

1 400g tin of kidney beans drained

1 egg beaten

seasoning (chilli powder if you like it spicy but black pepper and a little salt is good too)

fresh parsley finely chopped

A little plain flour to prevent sticking

To make the veggie bean burgers you need to:

Put the kidney beans into a large bowl and mash leaving some bigger pieces

Add of the vegetables, breadcrumbs, seasoning, parsley and mix.

Add the egg and mix in throughly

Shape into burger shapes I made 8 and place on flour tray or plate in fridge till ready to cook.

Grill for 15 minutes turning several times.

Then they are ready to serve and enjoy. We had ours in burger buns with salad and a few potato wedgies on the side.

Very yummy, very easy, very healthy and kind on the purse too. Sorry don’t have a cooked picture. Hungry children and poor winter light didn’t make for a good one, but promise they looked nearly as good as they tasted.
