Summer Salad Recipe 5

I love the summer for lots of reasons but one of my favourite reasons is an excuse to bring out the picnic hamper. When the sun does eventually make an appearance I love eating out and especially making a picnic for supper even on a school night!!!

But with our very unpredictable weather, picnic’s have to be easy too. I like to keep key picnic ingredients in the fridge or freezer just in case the sun surprises us with a visit! Apetina cheese is a perfect example of an ingredient perfect for picnic salads and easy to keep in the fridge all ready to go. I particularly like the Apetina ready cubed variety and the one I chose was even easier to use as it was already in herb oil with garlic and olives. How perfect is that to start off a perfect salad picnic recipe.

 

This is my Apetina recipe Summer salad picnic recipe. It is nice and filling so is perfect to pack up with perhaps some nice bread, cherry tomatoes and of course a cake or two!!!

Fresh & Zingy Apetina New Potato Salad

You will need:

800g new potatoes cooked and cooled

1/2 a cucumber

1 red pepper

A bunch of spring onions

1-2 packets of Apetina cheese

(I used 150g  Apetina in herb oil with stuffed olives and garlic)

Juice and zest of 1 unwaxed lemon

Fresh herbs – I used mint, oregano and marjoram (this are herbs I had in the garden but things like parsley also work really well)

Freshly ground black pepper

You need to:

Cut the cooked potatoes into bite sized pieces

Take your half a cucumber and cut it in half length ways down the middle. Each halved piece cut length ways again in 4 more pieces. Then chop into chunky bits. Not to thin as we don’t want soggy salad!!!

Chop the red pepper into similar sized pieces and roughly chop the spring onions and fresh herbs and place in a large bowl.

Add all the rest of ingredients into the bowl with the other ingredients and give a thorough mix.

There you go a perfectly quick, healthy and most importantly delicious picnic salad recipe.

So lets hope the sun shines, if not all the above ingredients excluding the cucumber and lemon juice could easily made into a wonderful Frittia which I would like to add cooked and cooled would also make for a rather nice picnic food.

You need to:  fry the pepper in a little olive oil for a few minutes, add the spring onion and new potatoes (chopped slightly smaller) and cook for another 2 minutes. Add the herbs, lemon zest, Apetina (drained if in oil), black pepper and 6 beaten eggs. Cook for a couple of minutes on the hob and finish cooking under a hot preheated grill. Cut into wedges to serve. If for a picnic chill before packing in the picnic basket!!!
