This seemed to be popular when I mentioned it on my ‘Meal Planning Monday’ so as it so easy I thought I pop up the recipe. All my ‘lot’ like it and we all know how sometimes it hard to please the whole family!!!
For the sauce you will need:
1 onion chopped
2 garlic cloves chopped
1 head of broccoli cut into small florets
about 10 cherry tomatoes cut into 4-6 pieces
I tub of cream cheese
Milk approx 4-6 tablespoons
A good grind of black pepper
A little butter or olive oil to fry onions and garlic
You will need to:
- Steam the broccoli or cook in microwave till tender.
- Heat the olive oil or butter in a frying, then add your onions and cook until softened and turning golden. Add garlic and cook for a further minute.
- Add the tub of cream cheese to the pan and stir until melted. Now add a little milk, 1 tablespoon at a time and stir well until you get the consistency you like in sauce. Add the cherry tomatoes and the broccoli and a good grind of black pepper. Mix in and your ready to serve with your favourite pasta.
This also works really well with baby spinach just add the spinach when you add the garlic and cook until just wilting and then continue as above.
