Autumn is definitely the time of year to get soup making. Soup is not only packed full of goodness it is also good for the soul to make. There is something rather nice about making soup and the gorgeous smells that waft through the air, cry out comfort.

I have described this as earthy, not because I didn’t wash off the soil…but because I have added turmeric for extra goodness and a warming earthy flavour. Turmeric as we probably all have read is super good for you. So it makes perfect sense to add it into our cooking.

This soup shouts out goodness and tastes gorgeous too. The vibrant colour from the carrots, sweet potatoes and turmeric is so welcoming and look perfect for Autumn.

It is super easy to make, like most soup and will freeze well so maybe make a double batch to freeze for another day.

Ingredients

Instructions
  1. Heat the oil in a large pan and add the onions. Cooked until softening and going golden.
  2. Add the sweet potato and carrots and cook for a further 10 minutes until they begin to soften a little.
  3. Add the garlic, turmeric, ground black pepper and chilli and cook for another 3 minutes. Then add the stock and thyme, bring to the boil then simmer for 15 minutes or until the carrot and sweet potato are tender.
  4. Blend about one third to a half of the soup and stir. If you prefer blend until smooth. Serve with a few more fresh thyme leaves if using.
Recipe Notes

This is a hearty soup and makes a lovely lunch or supper. I love to serve soup as a main meal with the addition of homemade potato wedgies.

This will freeze well.
